What Does Water Activity Measure?
Water activity (aw) is the ratio of the vapour pressure of water in a sample to the vapour pressure of pure water at equilibrium.
In practical terms, water activity describes how much of the water in a product is available to support microorganisms and participate in chemical, enzymatic and physical changes.

Water Activity Is Not the Same as Moisture Content
Moisture content measures the total amount of water present in a product.
